Homemade Cake Release (Pan Release)
When you bake as often as we do around here, you learn one truth fast: getting clean, beautiful cake layers out of the pan is half the battle. Store-bought sprays work in a pinch, but nothing beats a reliable homemade cake release you can whip up in minutes. This little mixture keeps your cake layers intact, your pans protected, and your confidence sky-high.
This is the same formula I teach new bakers because it's simple, affordable, and it always gets the job done.
Why This Homemade Cake Release Works
This blend of oil, shortening, and flour creates a thin, even barrier between your batter and the pan. The oil adds moisture and glide, the shortening provides structure, and the flour bonds to the batter as it bakes—helping your cake slip right out without tearing. When you’re learning (or leveling up) your baking skills, small wins like flawless cake layers make all the difference.
Simple Time & Serving
Prep Time: 5 minutes
Total Time: 5 minutes
Yield: 1 cup
Ingredients
• ½ cup vegetable or canola oil (112 g)
• ½ cup shortening (95 g)
• ½ cup all-purpose flour, scooped and leveled (65 g)
Equipment
• Silicone pastry brush
• Airtight container
• Whisk
• Mixing bowl
Instructions

- Add the oil, shortening, and flour to a mixing bowl.
- Whisk until the mixture becomes smooth and no lumps remain. It will look clumpy at first—keep going. After 2–3 minutes, it will lighten in color and turn into a silky paste.
- Transfer to an airtight container.
- To use, dip a silicone brush into the mixture and coat the bottom and sides of your cake pan in a generous, even layer before adding your batter.
- After baking, let your cake layers cool completely. Run an offset spatula around the edges of the pan, flip, and enjoy a perfect release.

Storage
• Store at room temperature for up to 3 months.
• Store in the refrigerator for up to 6 months.
• Stir before each use if it separates slightly—totally normal.
