What You’ll Need

Equipment

  • Large stockpot or Dutch oven
  • Wooden spoon
  • Whisk
  • Measuring cups and spoons
  • Potato masher or large fork
  • Ladle
  • Small bowls for toppings

Ingredients

Soup Base

  • 6–8 medium gold potatoes, peeled and cubed
  • 8–10 bacon slices
  • 6 tbsp unsalted butter
  • 1/4 cup yellow or sweet onion, diced
  • 2–3 garlic cloves, minced
  • 1/3 cup flour
  • 3 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream or half and half
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika

Add-Ins & Toppings

  • 2 cups shredded cheddar cheese
  • Sour cream (optional)
  • Chopped chives or green onions (optional)

Let’s Get Cooking!

1. Cook the Bacon

In a large pot, cook the bacon until crispy. Remove and set aside on a paper towel-lined plate. Leave 2–3 tablespoons of the bacon fat in the pot.

👩‍👧‍👦 Parent Tip: Let younger kids help crumble cooled bacon into a bowl for toppings later!

Step 2: Sauté the Onions and Garlic

Add diced onion and garlic to the bacon grease and cook until soft and fragrant (about 3–4 minutes).

🍽️ Chef Tip: Stir frequently so the garlic doesn’t burn!

👩‍👧‍👦 Parent Tip: Let little kids sprinkle in garlic and stir with supervision. Middle kids can do this step with light oversight.

Step 3: Build the Base

Add 3 tablespoons of butter and let it melt. Then stir in the flour, salt, pepper, garlic powder, onion powder, and smoked paprika. Stir well to make a roux.

Slowly whisk in the chicken stock, milk, and cream until smooth and creamy.

Step 4: Add the Potatoes

Add cubed potatoes and the remaining 3 tablespoons of butter. Cover and simmer for 15–20 minutes until the potatoes are soft.

🍽️ Chef Tip: Use a potato masher to gently mash some potatoes right in the pot for a thicker soup!

👩‍👧‍👦 Parent Tip: Let younger kids mash gently with a sturdy spoon or potato masher once it's safe. Middle kids can handle this step with guidance.

Step 5: Finish It Off

Add the shredded cheddar cheese and stir until melted. Crumble the cooked bacon and stir most of it into the soup (save some for topping).

Time to Serve!

Spoon the soup into bowls and top with extra cheese, bacon, sour cream, and chives for that “loaded” magic.

Pro Tips for Success

  • Let little ones sprinkle toppings for a fun finishing touch.
  • For a smoother soup, blend half the batch using an immersion blender (grown-up step!).
  • Add a pinch of cayenne if your family likes a little kick!

Recipe Notes and Variations

  • For a healthier twist, use turkey bacon and low-fat milk.
  • Feel free to experiment with different cheese varieties like Monterey Jack or Gruyère.
