This little mixture keeps your cake layers intact, your pans protected, and your confidence sky-high.

This blend of oil, shortening, and flour creates a thin, even barrier between your batter and the pan. Ingredients

• ½ cup vegetable or canola oil (112 g)
• ½ cup shortening (95 g)
• ½ cup all-purpose flour, scooped and leveled (65 g)

Equipment

• Silicone pastry brush
• Airtight container
• Whisk
• Mixing bowl

Instructions

  1. Add the oil, shortening, and flour to a mixing bowl.
  2. Whisk until the mixture becomes smooth and no lumps remain. It will look clumpy at first—keep going. After 2–3 minutes, it will lighten in color and turn into a silky paste.
  3. Transfer to an airtight container.
  4. To use, dip a silicone brush into the mixture and coat the bottom and sides of your cake pan in a generous, even layer before adding your batter.
  5. After baking, let your cake layers cool completely. Run an offset spatula around the edges of the pan, flip, and enjoy a perfect release.

Storage

• Store at room temperature for up to 3 months.
• Store in the refrigerator for up to 6 months.
• Stir before each use if it separates slightly—totally normal.
