This Banana Nut Muffins recipe resembles a banana bread recipe. However, I decided to bake it in cupcake molds and add a few tweaks by adding walnuts and cinnamon to it. These muffins are sweet and delicious especially when you got ripe bananas to use in this recipe.
Moreover, these muffins are just light and fluffy which can really brighten up your day once tasted.
Equipment to Use in the Process
For this recipe, the following tools are needed to accomplish the recipe:
- Cupcake tin- This serves as our mold for the muffins. A 12 CT would be great for this particular recipe.
- Cupcake liners- These are papers that are used to contain the batter poured into the cupcake tins
- Ice cream scooper- This is used to scoop the batter of the muffin mixture and it ensures an equal amount is poured into each cupcake tin.
- Hand or a Stand mixer- This is used to beat, whip, and combine all the ingredients and make sure that they are in uniform consistency. Also, it makes the baker’s work less tiring!
- Rubber spatula- It is used for stirring and blending batters and other mixtures, and in folding mixtures gently.
Ingredients for the Recipe
To complete our Banana Nut Muffin, there is a set of components needed. You need to prepare unsalted butter, granulated sugar, brown sugar, large bananas, and eggs. Also, make sure that whole milk, vanilla, all-purpose flour, and baking powder are present. And lastly, ensure to have ground cinnamon, allspice, and chopped walnuts.

How to Make the Banana Nut Muffins
- Prepare the oven and linens
You may begin by preheating the oven to 350 degrees. Also, prepare the cupcake or muffin tins with linens.
- Make the batter.
Then, proceed with mixing the dry ingredients followed by the wet ingredients using the hand or stand mixer. Continue to mix until they are well incorporated.
If you noticed that there are lumps because of the banana, this is totally fine.
After that, you may now add the walnuts and scoop the batter using the ice cream scooper into the muffin tins.
- Baked it.
On this part, you are now ready to bake them. Bake it for 18-20 min or until a toothpick comes out clean.
- Let it cool.
Remove the baked muffins from heat and let chill on a cooling wrack.

Ingredients
- 1/2 cup 1 stick unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2-3 large bananas
- 2 large eggs
- 3 tbsp whole milk
- 1 tsp vanilla
- 2 cups all purpose flour, scooped and leveled
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp all spice
- 1/2 chopped walnuts
Instructions
- Preheat the oven to 350
- Line muffin tin with liners
- In a large bowl cream butter and sugar until light and fluffy.
- Add bananas and mix into butter/sugar mixture.
- Add the eggs, milk and vanilla extract.
- It will be lumpy from the bananas which is fine.
- Add flour, baking soda, baking powder, cinnamon and all spice to the batter.
- Mix until flour is combined.
- Coat walnuts in a little flour and stir into batter.
- Spoon into prepared liners and bake for 18-20 min or until a tooth pick comes out clean.
- Remove from heat and let chill on cooling wrack.
