Ingredients

- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder, optional
- 1 cup diced peaches, drained from juice

Glaze
- 1 cup powdered sugar + 1/4 to 1/2 cup peach juice
Instructions
- Cream butter and sugars for 5 mins or until light and fluffy
- Beat in the egg and peach flavoring.
- Sift flour, salt, baking soda and *baking powder (see notes) and incorporate.
- Add in diced peaches.
- Scoop evenly sized balls onto parchment lined baking sheets.
- Chill for 30 mins.
- Preheat oven to 350 and bake for 15 mins.
- Mix glaze and spoon over cookies.
- Allow 45 mins to an hour to set fully.
