Cherry Scones
Equipment
- Small bowl
- Colander/strainer
- Measuring cups/bowls
- Large bowl
- Pastry cutter or fork
- Medium bowl
- Parchment lined baking sheet

Ingredients
- 1/2 cup dried cherries chopped
- 2 1/2 cups all purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/3 cup unsalted butter
- 2 eggs beaten
- 3/4 cup heavy whipping cream
- 1/4 tsp vanilla or almond extract
Topping
- 2 tbsp heavy whipping cream
- 2 tbsp sugar
- Dried cranberries
Instructions
- Preheat the oven to 400 degrees
- Place dried cherries in a small bowl with just enough boiling water to cover them.
- Let stand 5 mins then drain
- In a large bowl add flour, sugar, baking powder and salt.
- Use pastry cutter or fork to cut in cold pieces of butter until coarse crumbs appear.
- Make a well in the center of the dry ingredients and set aside.
- In a medium bowl, combine eggs, 3/4 cup whipping cream, vanilla and drained cherries.
- Add mixture to the well of the dry ingredients
- Fold in the wet ingredients with a rubber spatula until all of it moistened.
- Lightly flour your hands and form a ball of dough.
- Cut in half.
- Shape the two spheres into 6 in round circles, be sure to pat it down evenly
- Cut the circles into 6 pieces each for a total of 12.
- Place each triangle on a parchment lined baking sheet and brush with heavy cream.
- Top with a sprinkling of granulated sugar.
- Bake for 15 mins in a 400 degree oven.
- Add extra dried cherries on top if you’d like.
Quick glaze:
- 1 cup powdered sugar.
- 2-3 tbsp heavy cream or 2-3 tsp milk or water. Mix together and drizzle.
