Thus, this gluten-free pancake bites recipe is just a perfect fit. First, these are healthy goodies as they are gluten-free. Second, they are easy to prepare. Ultimately, you can create a batter in bulk and just froze it. You can use them from time to time when you feel like need to create a breakfast meal with a snap of a finger.

What Equipment Should You Prepare?
Generally, you will only need three basic tools for this recipe, and they are:
- Silicon baking tray, of course, is used for baking the pancake bites.
- Whisk, for mixing the ingredients of the pancake batter.
- Bowls, are used as your mixing containers.
What Ingredients Should You Need?
Likewise, for the ingredients, you have to prepare the following components:
- Granulated sugar and Vegetable oil, 2 tablespoons for each ingredients.
- Egg, one piece.
- Pure vanilla extract, one teaspoon.
- Bobs Red Mill gluten-free flour, one cup and must be spooned and leveled.
- Gluten-free baking powder, one tablespoon.
- Salt, ¼ teaspoon.
- Milk, ¾ cup.
- Add-ins- berries, chocolate chips, bananas, etching

How to Make the Gluten-Free Pancake Bites?
To begin this quick and easy recipe, preheat the oven to 400°. While allowing the oven to warm, add all the wet ingredients to a bowl and whisk together until incorporated. This will be followed by adding in the gluten-free flour and other dry ingredients blend until just combined.
Subsequently, stir in any add-ons for example chocolate chips or fresh fruits and carefully spoon batter inside of silicone baking trays and bake 10to 12 minutes. Just like done, You’re done. You may now serve it and enjoy!

How to Freeze and Store the Pancake Bites?
These pancakes can be frozen and reheated in the microwave. To freeze, allow them to completely cool and place them on a parchment lined baking sheet and freeze them for 10 minutes to help prevent sticking. Place the pancakes inside of a freezer bag, separate layers with parchment paper.

In this recipe, I used mini chocolate chips and organic whole wild dried blueberries.
Also, to make it vegan recipe, use Bobs Red Mill Gluten free egg replacer instead of an egg Dairy-free or use almond, cashew, or coconut milk.
