Skill Level: 8+ with grown-up help

Why You’ll Love Making This

• It’s a hands-on way for kids to practice measuring, stirring, and following directions.
• Teaches how small changes in temperature and time affect texture.
• Perfect for learning about patience — the longer it cooks, the creamier it gets!

What You’ll Need

Equipment
• Medium saucepan with lid
• Wooden spoon or whisk
• Measuring cups and spoons
• Small mixing bowl
• Serving bowls or jars

Ingredients
• 2 cups water
• 1 cup uncooked long-grain white rice
• ¼ teaspoon kosher salt
• 1 can (8 oz) evaporated milk
• 1 cup granulated sugar
• 1 teaspoon vanilla extract
• ½ teaspoon ground cinnamon + pinch of nutmeg
• 1 large egg yolk
• 2 tablespoons dried fruit (raisins, cranberries, or cherries), chopped
• 2 tablespoons cold unsalted butter

Step-by-Step Instructions

Step 1: Cook the Rice
In a medium saucepan, bring water, rice, and salt to a boil over medium-high heat. Once it’s bubbling, lower the heat, cover, and simmer until tender — about 20 minutes.

👩‍👧‍👦 Parent Tip: Younger chefs can help measure the water and rice, but grown-ups should handle the hot stove.

Step 2: Sweeten and Stir
Remove the pot from heat. Pour in the evaporated milk and sprinkle in the sugar. Use a whisk to stir gently and lift any bits of rice from the bottom of the pan — that’s where all the flavor hides!

Step 3: Thicken the Pudding
Place the pan back on medium heat. Keep stirring often as the pudding thickens — about 8 to 10 minutes. The longer you cook it, the thicker and stickier it will become.

Step 4: Add Warm Spices and Vanilla
Once thickened, remove from the heat. Stir in vanilla, cinnamon, and nutmeg for that cozy aroma.

Step 5: Temper the Egg Yolk
In a small bowl, combine a few spoonfuls of the hot pudding with the egg yolk and stir well. Quickly whisk this mixture back into the pot — this prevents the egg from scrambling. Continue whisking for about one more minute.

🍽️ Chef Tip: This step adds creaminess! Keep whisking so your pudding stays smooth.

Step 6: Add the Finishing Touches
Stir in dried fruit and butter until melted and evenly mixed. Spoon the warm pudding into serving dishes.

Step 7: Chill and Serve
Let the pudding cool to room temperature, then cover and refrigerate for 3–4 hours until cold and thick.

Pro Tips for Success

• Want extra creaminess? Swap half of the evaporated milk for whole milk.
• Don’t rush the stirring — constant motion keeps the pudding smooth.
• For added flavor, top with a sprinkle of cinnamon sugar or a drizzle of honey before serving.

FAQ from Chefs-in-Training

Q: Can I skip the egg yolk?
A: Yes, but the pudding won’t be quite as rich or creamy.

Q: What if my pudding is too thick?
A: Stir in a splash of milk before chilling to loosen it up.

Q: Can we eat it warm?
A: Absolutely! It’s delicious either warm or chilled — your kitchen, your choice.
