Why You’ll Love Making This

Fried rice is a flavorful, budget-friendly dish that uses up leftovers and lets you get creative. Whether you stick with the basics or build your own version, it’s a great way to feel confident in the kitchen and have a full meal on the table fast.

What You’ll Need

Equipment

  • Large skillet or frying pan
  • Spatula or wooden spoon
  • Small bowl (for beating eggs)
  • Measuring spoons and cups

Ingredients

  • 4 cups cooked rice (cold, day-old rice works best!)
  • 2 tablespoons sesame oil (or another oil like canola or peanut)
  • 2 tablespoons minced garlic (3–4 cloves)
  • 4 eggs, beaten
  • 2 cups frozen peas & carrots (or your favorite mixed veggies)
  • 1/3 cup soy sauce (or tamari for gluten-free)
  • 2 cups cooked protein (ground chicken, beef, pork, or tofu – optional but yummy!)

Let’s Get Cooking!

Step 1: Heat It Up

Place your skillet over medium heat and add 1 tablespoon of sesame oil. Once hot, toss in your garlic and frozen veggies. Stir often for about 3–4 minutes until the veggies soften and the garlic smells amazing.

Step 2: Make Space for Eggs

Push the veggies to one side of the pan. Add another tablespoon of oil to the empty space. Pour in the beaten eggs and scramble them until they’re fully cooked—about 2–3 minutes.

👩‍🏫 Chef Tip: Keep the heat medium-low so the garlic doesn't burn and the eggs cook evenly.

Step 3: Mix It All Together

Now stir the eggs and veggies together. Add in your cold rice, soy sauce, and protein if you’re using it. Stir gently to mix everything.

Step 4: Heat and Finish

Turn the heat to low and cook for another 5–7 minutes, stirring every so often. This lets the flavors blend and everything heat through.

Pro Tips for Fried Rice Success

  • Cold rice is key: Warm rice will turn mushy. Use rice that’s been chilled for at least a few hours.
  • Don’t rush: Keeping the heat medium-low helps keep everything cooking evenly without burning.
  • Taste and tweak: Start with a little soy sauce and add more to fit your flavor style.

Make It Your Own

  • Protein Picks: Leftover chicken, cooked shrimp, tofu, or even a scrambled plant-based egg work great.
  • Veggie Swaps: Try bell peppers, corn, or green onions. Avoid watery veggies like tomatoes.
  • Flavor Boost: Add a splash of rice vinegar or a dash of sriracha for an extra kick.

FAQ for Grown-Ups

Can my 9-year-old make this alone?
With experience, yes! If they’re confident using the stove and measuring ingredients, they can likely manage with just a bit of oversight. For younger chefs, you might want to prep ingredients like garlic and protein ahead of time.

What if we don’t have sesame oil?
No worries! Canola, vegetable, or peanut oil works fine. Sesame oil adds a distinct flavor, but it’s not required.

Is this good for meal prep?
Absolutely. This dish keeps well in the fridge for 2–3 days and can be reheated in the microwave or skillet.

Can I use fresh vegetables instead of frozen?
Definitely. Just make sure to chop them small and cook them a little longer until soft.

FAQ from Your Chef Instructor

Why does the rice need to be cold?
Cold rice is drier and separates more easily, which helps you avoid a sticky mess. It also crisps better in the pan.

What if my eggs cook unevenly?
That’s okay! As long as they’re fully cooked, just mix them into the veggies. Next time, try lowering the heat and giving them more space to scramble.

Can I add more than one protein?
Totally! Just make sure everything is cooked through before adding it to the pan. This recipe is all about making it your own.

My garlic burned—what happened?
The pan was probably too hot. Next time, lower the heat and stir more often. Burned garlic can make the whole dish taste bitter, so keep an eye on it.

Notes

White or brown rice can be used to cook fried rice.
I prefer to prepare the rice a day ahead of time.
Peanut oil or canola oil can work in place of sesame oil
You can add just about any veggie you would like that doesn't produce a lot of water when cooking
Any meat (chicken, beef roast, braised short rib, chopped ham, any protein) can be tossed in, just
make sure all ground meat is fully cooked prior to adding. Raw shrimp can be added, it will
need to be chopped small so it has time to cook through once added
