As your Chef, you could consider my tips here. First, if you cannot find Ghirardelli melting wafers and have to use candy melts Use Coconut oil or Paramount crystals to thin out the candy melts.
Also, in order for the chocolate or candy melts to fully set, you need to use something that will send it out that hardens when it is cool.
