Roasted Garlic and Herb Mashed Potatoes

Equipment

  • Stock Pot
  • Potato Masher or Ricer or Hand/Stand Mixer
  • Measuring cups & spoons

Ingredients
  

  • 5-6 cloves garlic peeled
  • 2-3 tbsp Olive Oil
  • 8-10 Yukon Gold Potatoes
  • 1/2 cup unsalted butter
  • 1 cup heavy cream room temp
  • 3/4 cup whole milk room temp
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1 tsp Herbs de Provence

Instructions
 

  • Heat the oven to 400 degrees
  • Add garlic cloves and olive oil to a ramekin or small baking dish
  • Cover with foil and bake for 30 min
  • Peel and cut potatoes to an even size
  • Rinse well
  • Add to a pot and fill with water
  • Add 2-3 tbsp kosher salt to the water
  • Bring to a boil over high heat
  • Once boiling, let cook 10 min or until fork tender
  • Remove from heat and drain
  • Place back into pot.
  • Remove roasted garlic from oil (save oil for cooking in other recipes)
  • Mash the garlic and add to the potatoes
  • Add in seasonings, heavy cream, 3/4 stick of butter and half the milk
  • Mash the potatoes or use a mixer and mix them.
  • Add in more milk to reach your desired consistency.
  • Top with the last bit of butter, serve and enjoy

Notes

Feel free to add fresh herbs in place of the Herbs de Provence!
