One Pan Mexican Rice

Mexican Rice

Equipment

  • Large skillet

Ingredients
  

  • 1 lb ground beef
  • 1 small onion chopped
  • 1 15 oz can corn
  • 1 tsp garlic powder
  • 1 cup beef broth
  • 1/2 cup water
  • 1/2 to 1 cup salsa
  • 8 oz tomato sauce
  • 1 cup long grain rice
  • 1 tsp salt and pepper
  • 2 tbsp taco seasoning
  • 1 cup shredded cheese

Instructions
 

  • Brown beef over medium heat.
  • Drain and set aside
  • Add onions to the pan and begin to gently sauté for 2-3 min
  • Return the meat to the pan.
  • Add in taco seasoning and garlic powder. Stir to incorporate.
  • Add tomato sauce, salsa, beef stock, water and rice.
  • Bring to a boil.
  • Reduce heat and simmer for 15-18 min
  • Be sure to check the rice and make sure it’s not sticking to the pan while simmering. If more water is needed for the final simmer, add it so the rice is fully cooked.

Notes

Once the ingredients are brought to a boil taste the sauce to see if needs any salt or pepper.
