All About Confetti Whoopie Pies!
Many people would claim that whoopie pies are from the Americans. These are baked goodies that people would say are actually cookies, cakes, sandwich, and the like. Moreover, whoopie pies are made of two round mound-shaped pieces of cookies or cakes with fillings in between.
Subsequently, a variety of recipes are saying that they can be in different flavors like chocolate and vanilla. More than that, it is being served on many occasions as snacks and desserts. These are truly enticing, especially for kids.
Well, in this recipe, the whoopie pies taste well with vanilla flavor. Also, they are very colorful because of the sprinkles which make them more like confetti. An appearance that appears so happy in colors to cheer you up and looks that would truly attract the kids to consume them, not just in one bite but multiple times. Let’s begin now!

- Uncoated Sprinkles (I recommend you to have these sprinkles here!)
Whereas for the ingredients, here are the following:
- vanilla cake mix
- vegetable oil
- eggs
- vanilla extract
- uncoated sprinkles
For the Marshmallow icing, the following are needed:
- marshmallow fluff
- butter
- vanilla

Instructions for the Confetti Whoopie Pies:
The steps to complete this recipe is pretty simple. Generally, only five big steps are required and they are the following:
Firstly, preheat the oven to 375. While doing so, add cake mix, eggs, oil, vanilla, and sprinkles to a large bowl and stir until fully incorporated.
Secondly, using a small cookie scoop, scoop even balls of the cookie dough onto a parchment-lined baking sheet. Just leave 2 inches between each ball of dough so it has room to expand. Thirdly, bake in a 375-degree oven for 10to 12 minutes or until the edges begin to brown. After that, just let it cool.
Fourthly, make the marshmallow icing by beating fluff and butter until smooth. Followed by, adding in the confectioners’ sugar a little at a time beating until smooth. Remember, the icing should not be super stiff but fall into a ribbon pattern.
Lastly, using the same scooper from the cookies, add one scoop of icing to the cooled cookies. Roll in the sprinkles. Serve at room temperature or serve cold.
Take note that these sandwiches will mimic an ice cream sandwich if chilled or lightly frozen, without melting. If the icing doesn’t fall in a ribbon pattern, add a teaspoon of water to loosen it up a bit. Avoid a wax-coated sprinkle for this dessert. It will make for a better mouthfeel.

- 1 box vanilla cake mix
- ¼ cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- ¼ cup uncoated sprinkles
- Marshmallow icing
- 1 7.5 oz jar of marshmallow fluff
- 1/2 stick butter
- 2 tsp vanilla
Instructions
- Preheat oven to 375
- Add cake mix, eggs, oil, vanilla and sprinkles to a large bowl and stir until fully incorporated.
- Using a small cookie scoop, scoop even balls of the cookie dough onto a parchment lined baking sheet.
